Pat the chicken breasts dry. Season both sides with salt, black pepper, and paprika.
Heat olive oil in a large skillet over medium-high heat. Sear chicken for about 4–5 minutes per side, until golden brown. Transfer to a plate.
Reduce heat to medium and melt the butter in the same skillet.
Add minced garlic and cook for about 30 seconds, stirring frequently.
Sprinkle in the flour and stir for about 30 seconds.
Slowly add the chicken broth while stirring, then add the heavy cream and Italian seasoning. Bring to a gentle simmer.
Reduce heat to low and gradually stir in the Parmesan until the sauce is smooth and creamy.
Return the chicken to the skillet and spoon the sauce over it.
Cover loosely and cook for another 5–8 minutes, or until the thickest part of the chicken reaches 165°F (74°C).
Garnish with fresh parsley and extra Parmesan. Rest for 5 minutes before serving.
